Skillet Cookie for Two

This literally is just Nestle Tollhouse recipe cookie dough (with my minor adjustments, as per the usual), put in a skillet and cooked.  Usually, recipes I have seen for this use a 10" or so pan, but I'm like, "How the heck can anyone polish off that much cookie??"  I mean, maybe at a party or something, but in that case, do you really want to be spooning out bites alongside of a bunch of other people?  Um...not me.  Anyway, so what I did is I bought these super cute 6" cast iron skillets and I'm reserving them wholly for making treats.  Even one of these puppies is way plenty for two. 

 

Preheat oven to 375º and set rack to the middle of the oven.  Put cookie dough into the skillet to fill it about half way when melted down (the cookie definitely expands as it cooks and since it can't go out more, it goes UP.   Stick the skillet into the oven and cook until the center no longer looks soupy.  I think it took me about 20 min.  Take the skillet out and set it on a rack to cool a little.  Top with ice cream, hot fudge, sprinkles, whipped cream, and whatever else your heart desires!  A totally fun twist on chocolate chip cookies, and perfect for a fun date night at home in front of a movie with your significant other, or your kid or yourself.  :)
