This was a very easy recipe with excellent results. So delicious. I got it from The Cookie Rookie's site (so many great recipes there!). The only change I made is that my chicken breasts were so huge that I definitely needed (or wanted) to wrap 2 slices of prosciutto around each breast, rather than the 1 slice the recipe calls for. For sure, in this recipe, the more prosciutto, the merrier.
I was a bit nervous about making sure the enormous chicken breasts I had purchased would cook all the way through without getting dry, but it worked out perfectly. As you can see from the photos, though, I did cut into 2 of them to make SURE they were fully done. Cooking is still something I'm learning about.
I enjoyed this over a bed of grilled asparagus, and my husband enjoyed it over a bed of rice with a side of asparagus. :)
