St. Patrick's Day Rice Krispie Treats

Oh man, who doesn't love a Rice Krispie Treat? For these festive guys, I wanted to use the fun marshmallows from Lucky Charms, but I didn't want to lose the soft texture of the bars by using the cereal portion of Lucky Charms, so I stayed the course with Rice Krispies, and added only the green shamrocks and the rainbows from Lucky Charms. I was even able to find a special St. Patrick's version of Lucky Charms that only used clover marshmallows in a couple shades of green, so that was fun.

I made my first batch with green food coloring, which was so fun, but my 3-year-old wouldn't touch them! LOL. So I made a second "normal" batch. Which do you prefer? I think they are both totally cute and perfect for the occasion.

Here's my recipe:


5 T salted butter

4 1/2 Cups mini-marshmallows

1/2 tsp vanilla extract

5 Cups Rice Krispie cereal

1 Cup shamrock and rainbow marshmallows, picked out of Lucky Charms cereal

Green food coloring (optional)


Melt the butter over low heat. I used my large dutch oven, uncovered. Add marshmallows and stir until melted and mixed with the butter and smooth. Add vanilla & food coloring, if desired. Carefully fold in the Rice Krispies, followed by the Lucky Charms marshmallows.

Move the mix into a 8" x 8" square brownie pan (it's very sticky, so I usually coat my hands with some butter to make it easier), and then, using some wax paper on the top of the mixture, compress it snugly into the pan.

Wait until it cools, pop the square out onto a cutting board and cut into bars.
