I've been wanting to make this cake for sooooo long. And my goodness, it did NOT disappoint. It was so fun to make, so fun to decorate, so fun to look at and sooooo good to EAT! Wow. Also, it calls for Baskin Robbins ice cream, and I discovered that it's pretty cheap to get quarts of their ice cream. That's a dangerous new piece of information for me.
The cake part of this cake is a light meringue. There is also a layer of crushed Oreo cookies. I used my favorite version of Oreos, which is Whole Foods' Mismatched Sandwich Cremes. They are soooo good. The frosting is mostly just whipped cream. It's really fun and the PERFECT texture and taste with the mint chocolate chip ice cream. Mmmmm!
I found this recipe several years ago in Bon Appetit magazine, which I have had a subscription to for forever. The photo in the magazine looked absolutely incredible. I wish I could have made my photos look half as good, but they'll have to do. It was my first ice cream cake, and it was a resounding success at my son's 3rd birthday party yesterday. I was honestly pretty blown away by how this cake tasted. Plus, it looked amazing and really had the WOW factor, impressing all the other preschool moms. LOL.
